Hello Spring! S'mores Cookies


So once again I was gone and I had baking with drawl.  I was off to California for a week for work, where the best part was that I got to catch up with an old high school friend.  Well and we went whale watching and for once we actually saw a whale!  It really is beautiful out there and one of my very favorite places to go running.  

Well then I came home and back to work it was...well work in the office that is.  I thought cookies were definitely in order to take my break from work this week and to celebrate spring.  

These cookies are not photogenic...like me on most days, but they are still sweet and chewy.  As a co-worker said sometimes you can't "judge a cookie by its look.  It's what's on the inside (my belly) that counts."  Just trust me on this one...they might not look delicious but they are...promise.  They are made with graham cracker crumbs mostly instead of flour.  Plus the marshmallows toast while the cookies are baking, and who doesn't love toasted marshmallows??

The dry ingredients...75% graham cracker crumbs...25% flour


The little bits that don't fit through your sifter throw away.


Yummy marshmallows and chocolate chips...


S'mores Cookies:
*makes approximately 2 dozen cookies
1 stick unsalted butter, melted
1/2 cup brown sugar
1/4 cup granulated sugar
1/2 teaspoon vanilla
1 large egg

3/4 cup graham cracker crumbs (approximately 3 whole graham crackers)
1/4 cup flour
1/4 teaspoon salt
1/4 teaspoon baking soda

1.  In a large mixing bowl, cream together butter and sugars until well combined.

2.  Whisk in vanilla and egg.

3.  In a medium sized mixing bowl, sift together graham cracker crumbs, flour, salt and baking soda.  Any graham cracker crumbs that do not go through sifter throw in the trash.

3.  Whisk the dry ingredients into the wet ingredients, just until combined.  Fold in the chocolate chips and marshmallows.  Place dough into refrigerator while oven is preheating.

4.  Preheat oven to 325 degrees F.  Line a cookie sheet with parchment paper.

5.  Once oven has preheated, scoop dough onto prepared cookie sheet using a 1 inch cookie scoop or tablespoon.  Make sure the dough is approximately 2 inches apart.  Place remaining dough back into the refrigerator while cookies are baking.   Bake for 12-14 minutes.  The cookies will be darker than normal because of the graham cracker crumbs.   Remove from oven, and let cookies cool on sheet for 2-3 minutes and then remove to cooling rack.  Enjoy!
