What?!?! Cinnamon Chip Cookie Butter Cookies


Sometimes I really wonder what I am doing? Like there was a time a couple of years ago when my mind would always try to over complicate things.  Charles always says I have a million things going on in my head, and to just tell him one thing I am thinking about when I get "that look" on my face.  I don't know if it's a good thing or a bad thing, but I definitely do show my emotions on my face, and half the time I don't even realize it. 

Things the past couple of weeks have been hectic and there have been more than a few times where I have gotten "the look."  The problem is I have a tendency to be overly harsh on people, as well as myself, in work and in baking.  I mean the other day I made two dozen chocolate zucchini cupcakes and I almost threw them in the trash because I didn't think they tasted good enough.  It ended up that the birthday girl liked them though, so I was glad I didn't trash them.  In the real world though I know I will grow and learn over time.  I figure if I am cognizant of it, then I can try to step back and think about how in my office we are all a team.  That we really couldn't put on great meetings if we weren't all working hard and working together.  Plus while I might put my business out there to the world sometimes, others do enjoy their privacy, and therefore I have very little idea as to what is going on in their personal life.  In mine though there was crazy travel...

Sometimes I question, why I leave here aka California to come back to the cold winter in D.C.

So with all that life throws at us and two trips to California in the last three weeks there were some delicious baked goods produced including these cookies with very little blogging happening.  So, here goes nothing... 

I think I was day dreaming while getting ready to workout when I thought these up...I might have been just a little hungry.  Truthfully I was trying to think of something delicious to make with the cinnamon chips I found over Christmas.  The result was cookie butter cookies with cinnamon chips...think of a peanut butter cookie with peanut butter chips and that is the road I was driving down.  These cookies turned out so good that Caroline said they might be her favorite yet.  They were soft and chewy with these little cinnamon chip treasurers in them.  I will definitely be ordering more cinnamon chips from Hershey's so that I can make more of these cookies.  Give them a try and enjoy!

This is one of those cookie doughs that make perfectly round cookies.


Cinnamon Chip Cookie Butter Cookies:
1/2 cup unsalted butter, softened
1/2 cup creamy cookie butter (Trader Joes), or Biscoff cookie spread
1/2 cup white sugar
1/2 cup light brown sugar
1 large egg
1/2 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup all purpose flour
1/2 cup cinnamon chips (I used Hershey's)

1.  Pre-heat the oven to 350 degrees F.  Line a cookie sheet with parchment paper for easy clean up.

2.  In a large mixing bowl, or stand mixer fitted with paddle attachment, cream together the unsalted butter and cookie butter.  

3.  Beat in the sugars until fully combined.  

4.  Stir in the egg, vanilla extract, salt, baking soda and flour.

5.  Arrange by teaspoonfuls on cookie sheet or use a 1 inch cookie scoop and do heaping scoop fulls.  Press flat in the center with your finger or the back of a floured spoon.  Bake until firm on the edges and still slightly soft in the middle (about 10 minutes).  Makes about 5 dozen.

Store in an airtight container and Enjoy!
