Updating a Classic...Strawberry Lemon Bars

 
Sometimes we just have to switch things up, take a different route to work, try something new a menu where you always get the same thing...or even add strawberries to lemon bars and see how they turn out.  These turned out just as a I hoped they would...next time I am going to have to try strawberries.  These were lemony and tart but sweet and the strawberries really complement the flavor.  A co-worker who rarely eats sweets, went back for a second one and said he wished he could have it from his review mirrow like an air freshner because they smell so good.  These are really easy and simple, and it is the prefect time of year for them.   Summery with the light lemon taste with hints of spring strawberries.  I would deifnitely recommend trying these and enjoy!
 

To change things up this week, a meeting in the city with a view.


 
The base of these delicious treats...flour, butter and powdered sugar.

 
Coming together and ready for the bottom of the pan.

 
While the base of the bars bake, wash, dice, dry strawberries and then lightly flour.

 
Out of the oven and time to make the filling.

 
Once the lemon filling has come together, gently mix in the strawberries.

 
Pour the filling in the pan and then spread out the strawberries so that they are even throughout.

 
Once cooled, cut and lightly dust with powdered sugar and these are ready to go.

 
Strawberry Lemon Bars: (recipe adapted from Taste of Home)
Crust:
1 cup all-purpose flour
1/2 cup unsalted butter, softened
1/4 cup confectioners' sugar
 
Filling:
2 eggs
1 cup sugar
3 tablespoons all-purpose flour
1/2 teaspoon baking powder
2 tablespoons lemon juice
1 teaspoon lemon zest
Additional confectioners' sugar
 
1.  Preheat the oven to 350 degrees F. 
 
2.  In a bowl, combine the flour, butter and confectioners' sugar. Pat into an ungreased 8-in. square baking pan. Bake at 350° for 20 minutes.
 
3.  Cut up 4-5 medium sized strawberries.  Place on a dry paper towel and then sprinkle lightly with flour.
 
4.  For filling, in a small bowl, beat eggs. Then whisk in the the sugar, flour, baking powder, lemon juice and zest; beat until frothy.  Gently mix in the strawberries, then pour over the crust, spreading out the strawberries so that they are event.
 
5.  Bake 23-25 minutes longer or until light golden brown. Cool on a wire rack. Once cooled lightly dust with powdered sugar and cut into bars.  Serve and Enjoy!
