Apple, Cinnamon Chip & Pecan Scones



I think I have hit my quarter life crisis, just a few years late.  I have been doing a lot of thinking this year, and I feel like it has gotten me a whole lot of no where.  I have hit this point in life where I don't know what's next in life, but I feel very unsettled.  Have you ever felt this way?  Unsettled really is the best way for me to describe it.  Charles and I's friends all fall between married and having kids or single.  The thing about it is that I don't really think I want to have kids.  I have always kind felt that if I ever (because this was a thought long before I knew Charles.) had kids I would adopt, because there are so many children out there who need a good home.  But is that really what we want to do? I don't know.  Or should I dive into my career, grow my business, and see where it takes me?  I don't ever really mention God here because I am 100% fine with everyone having their own beliefs...you do you...but I have been talking at God a lot over the past several months, hoping I will get shoved in the right direction.  I am a pretty firm believer that if it's meant to be it will be.  For right now though, I am just trying to get back to baking to help clear my head.


This past weekend I headed to DC and made these scones for friends I would be staying with.  Saturday morning we got up WAY to early for a Saturday, and headed out for a 100 miles bike ride.  I know, I know another apple recipe, but trust me these scones are moist and delicious with a little crunch from the pecans, and the cinnamon chips even get a little melty.  Plus they are simply delicious.  So if you are in the mood to bake and love cinnamon chips like I do, give these a try and Enjoy!

Apple, Cinnamon Chip & Pecan Scones:
3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/3 cup granulated sugar (plus more for the tops)
1 1/2 teaspoons ground cinnamon

1/2 teaspoon ginger
1/4 teaspoon nutmeg
1 teaspoon pure vanilla extract
1 1/3 to 1 1/2 cups heavy cream

1 medium granny smith apple, cut into 1/4 inch pieces
1/2 cup cinnamon chips
1/2 cup chopped pecans


1.  Place a rack in the upper third of the oven and preheat oven to 425 degrees F.  Line a baking sheet with a parchment paper and set aside.

2.  In a medium bowl, whisk together flour, baking powder, salt, sugar, cinnamon, ginger and nutmeg.  Set aside.

3.  In a liquid measuring cup mix together vanilla extract and 1 1/3 cups cream. Drizzle the cream mixture into the dry ingredients tossing and stirring as you pour in the cream.  Add the chopped apples, cinnamon chips and pecans.  Toss together.  Add 2 more tablespoons of cream if necessary to create a moist, cohesive, but not sticky dough.

4.  Dump the dough onto a lightly floured work surface.  Gently gather and knead the dough into a dish and press the disk out into a 3/4″-thickness.

5.  Using a knife cut the dough into rectangles then into triangles as seen above.  Place on the prepared baking sheet 1-inch apart.  Top with thinly sliced apples if desired, as shown in the picture above and sprinkle each scone generously with sugar.

6.  Bake for 12 to 14 minutes or until golden brown and cooked through.  Remove from the oven and serve warm.  Enjoy!
